L'Oustaloun, since 1990

L'Oustaloun, the little house in Provençal, carries centuries of history within its walls. An abbey in the 16th century, then town hall and prison during the Revolution, then the village carpentry workshop, it has become the leading hotel-restaurant in the heart of Maussane-les-Alpilles, between Les Baux-de-Provence, the Luberon and the Camargue.

After training at the Savoie-Léman hotel school, Thierry returned to his roots in Provence, where it all began. Marielle, for her part, left her pharmacy in Avignon to do what she had always dreamed of: welcoming people, cooking and caring for others. Together, they have made this old house a place where you feel at ease the moment you arrive.

For 36 years they have cared for every corner of the house, refined every recipe and welcomed their guests with the same warmth you would reserve for old friends. The Quality Tourism label, awarded in 2014, crowned years of work and love of the craft.

Exploring the Alpilles

Baux-de-Provence, oil mills and mountain trails are just a few minutes away.

For several years now we have been coming to the restaurant L'Oustaloun. Everything is perfect there - the warm welcome from Thierry and Marielle, the decor of the dining room, the impeccable service and, of course, the delicious dishes coming out of the kitchen. Good produce, carefully prepared.
This time we booked 2 nights at the hotel - spacious room, very comfortable bed, we slept like
babies. And a delicious breakfast when we woke up.

The chef Jérôme Sauton creates a simple, sincere cuisine rooted in the Provençal terroir and the flavours of the South. Fresh market produce, olive oil from the Baux valley, herbs from the Alpilles: everything is homemade and prepared on site.
